Is Your Anti-Inflammatory Diet Actually Causing Bloating? 5 Surprising Triggers
March 21, 2026
The "Healthy" Diet Paradox
You’re doing everything right.
You’ve cleaned up your meals, swapped in more greens, and started following an anti-inflammatory diet plan.
But instead of feeling lighter, you feel puffy, tight, and uncomfortable.
If you’ve ever ended the day with a "salad belly" and jeans that suddenly don’t cooperate, you’re not alone.
I’m Julie, and I see this a lot.
Let’s get into five surprising reasons your anti-inflammatory diet might be the source of your bloating.
1. The Raw Veggie Overload
Raw salads can be a lot.
If your gut is sensitive, raw kale, broccoli, and cauliflower can ferment and create gas fast.
Try cooking your veggies more often, steaming, roasting, or sautéing usually feels way better.
2. The "Healthy" Sugar Alcohol Trap
Sugar alcohols can be a sneaky bloat trigger.
If you’re doing sugar-free, watch for xylitol, erythritol, and sorbitol, they often cause gas.
If a "healthy" bar or candy blows you up, it’s probably not in your head. Check the label and simplify.

3. Too Much Fiber, Too Fast
Fiber is great, until it’s too much too fast.
If you ramp up chia, flax, beans, and lentils overnight, you can get bloated or backed up.
Go slow, and drink more water.
4. Hidden Additives in Plant-Based Milks
Plant milks can mess with your gut if they’re loaded with gums.
If you’re using almond, oat, or coconut milk, check for carrageenan, guar gum, or xanthan gum.
Aim for the shortest ingredient list.

5. When Fermented Foods Backfire
Fermented foods aren’t always friendly.
If kombucha, sauerkraut, or kimchi cause immediate bloating, brain fog, or itchy skin, think SIBO or histamine issues.
If they make you feel worse, hit pause and work on your gut foundation first.

Finding Your Root Cause
I know it’s exhausting to eat "healthy" and still feel swollen.
The goal isn’t perfection, it’s figuring out what your gut can handle right now.
